First of all, I am SO<br /> glad I read thes article first. I followed Mike&#39;s advice...cooled and decanted the wine firt. Then we tasted it by itself, paired it with the best Parmesan I could fine...totally different wine! Oh, but then I cooked my filet au poivre...the experience was nearly orgasmic. We have never experienced such a combination! Truely amazing...THIS is why we work so hard all week long!
